200ml newly squeezed lemon juice
500g caster sugar

To make the Cocktail (makes 850ml, enough for 10)

200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

For the Cordial: Put all the items in a pot, heat until it reaches a simmer, stirring to dissolve. Next, take off the heat allowing it to cool completely. Transfer into a sterilised bottle, cap it keeping it chilled, where it will keep for about four weeks.

Preparing the Batch Mix: Pour all the spirits and syrup into one big jug, let it rest for an hour, then strain best through muslin, to ensure it's perfectly clear.

For serving: Add 85ml of the cocktail base into your stirring glass packed with ice, and agitate gently for one minute until cold. Pour into an chilled martini glass or similar, decorate with a few cranberries and complete it by giving it a light spray of mandarin oil over the top.
